IRISH CREAM TIRAMISU

3 tsp instant coffee
200ml hot water

2 tbsp amaretto

1 small premade cake
(I used walnut cake for a bit of texture but you could use madeira cake or chocolate cake)

1 tub of mascarpone
300ml double cream
3 tsp caster sugar
3 tbsp Irish cream
Cocoa powder to decorate

Make up the coffee with the hot water and add the amaretto.
Cut out the cake to fit your glass or bowl and dip into the coffee mixture. Then place in the bottom of your glass or bowl.

Whisk the double cream, mascarpone, Irish cream and sugar together to form soft peaks.

Add on top of the soaked sponge.

Sprinkle over the cocoa powder to decorate.

Hope you enjoy, let me know if you have any other recipe requests!

Rhubarb and Custard Cheesecake

Rhubarb and Custard Cheesecake

400g custard creams
150g butter
325g rhubarb
50g sugar
3 tbsp custard powder
400g cream cheese
300ml double cream

Chop the rhubarb into small pieces then add to a saucepan with the sugar on a medium heat. Stew for twenty minutes until soft.

Remove eight pieces for decoration then blitz the rest in a food processor with the custard powder until smooth. Leave to cool.

Next, blitz the biscuits until fine. Melt the butter then add to food processor and mix until fully combined with the biscuits.

Add the buttery biscuits to a loose bottom tin and press down firmly to make the base of the cheesecake.

For the filling, whisk the cream cheese to loosen then add the cooled rhubarb puree. Once combined, pour in the cream and whisk until the mixture has thickened.

Pour onto the base and level off.

Crush two custard creams for decoration and sprinkle over the edge of the cheesecake, followed by the eight pieces of rhubarb you save.

Leave to chill in the fridge over night then enjoy!

Trevaskis Farm, Cornwall

I have heard a lot of good things about Trevaskis Farm and have been wanting to visit for a while. It surpassed my expectations. I would recommend booking as I arrived just after it opened for lunch and it was already full. I had a delicious fig and blue cheese panini off the daily specials menu. But the desserts are really where Trevaskis comes into its own. The long counter was full of indulgent treats that could be eaten in or taken away. There was something there to suit every sweet tooth! I had a slab of lemon meringue pie and it was simply perfect.

I will be going back to try some of the hot meal options on the menu and tackle another huge dessert!

Gastrosteria Ai Mercanti, Venice, Italy

This was the final meal of my lovely trip to Italy recently. Ai Mercanti is tucked away down one of the many pathways in Venice. My friend and I sat outside in the little courtyard and thoroughly enjoyed the sophisticated dining experience. The Italian prosecco was spectacular and was the perfect compliment to silky, garlic and chilli spaghetti with parmigano fondue.
We also shared two desserts. Crème brulee and 'Chocolate interpretations'. The chocolate dessert was nothing like I had ever tasted before. The chocolate mouse and ice cream discs contrasted a bitter, dark cocoa crumble. There were flavours of chocolate I never knew existed. It was a truly stunning dessert.
What a fantastic restaurant in the city of contrasts that is Venice.

Rojano's in the Square, Padstow, Cornwall

Good food at Rojano's the other day. Situated in the centre of Padstow, it is now part of Paul Ainsworth's empire. Prices are what you would expect in a popular tourist town. The menu is inspired by Italian and Mediterranean cuisine. I had a pizza but for me it was all about the dessert. This one set you back a steep £8.50, however I thoroughly enjoyed it! The coconut sundae is served with chocolate brownie, coconut ice cream, salted caramel ice cream, chocolate mousse, popping candy, honeycomb and coconut ice chocolate bark. It's as rich and indulgent as it sounds!
If you love ice cream and coconut, you should try Rojano's just for this dessert.

The Waterfront, Plymouth

This was a perfect dessert. It was described as a chocolate budino, which I'd never heard of before. The thick Italian custard was coupled with a cardamom cream, mango salsa and mango sorbet. Every element complemented the next. Completely delightful.

Bourbon Pecan Pie @ The Golden Lion, Padstow, Cornwall

This pie was a delicious. Lovely meal, everything made from scratch. Great pub food.

Beautiful dessert at Marmadukes, York

My school friend got married at the weekend in the lovely city of York. I was very excited when this came out as the dessert. It consisted of vanilla sponge, white chocolate cream, raspberries and homemade Irish cream. It was a perfect end to a perfect day.

Pecan Bourbon and Cinnamon Buns

I made these from Stacie Stewart's new cookbook, Stacie Bakes. Great recipe, I didn't have enough pecans so added a few walnuts.
Here's me getting my book signed at The Cake and Bake Show in London...
